Harvesting is done exclusively by hand. Depending on the growth stage, we pick one bud and one to two leaves.
The first mornings of harvest are dedicated to green tea production. Then, depending on weather conditions, we may choose to produce either black or green tea. For black tea production, we ensure the leaves wither naturally outdoors.
Each day’s harvest is processed and packaged separately, resulting in a unique batch.
We have chosen not to blend different batches, allowing each tea to reflect our terroir at a precise moment in time—an "instant-tea"!
